Almond Milk Recipe

This recipe is by far my favorite one.

Almond Milk

Ingredients:

  • 1 cup Organic, raw almonds (soaked overnight)
  • 3 cups Filtered water
  • Nut bag (http://www.vt-fiddle.com/rawfood/nut_milk_bags_sprouting_bags.php)
  • Funnel

Optional:

  • Organic Medjool dates (2-3, pitted and soaked)
  • Vanilla bean or 1-2 splashes of organic Vanilla Extract (Avoid imitation vanilla- yuck)

I use my Vitamix, but I actually tried making it with a blender and it worked too.

Directions:

  • Add (1) cup almonds and (3) cups water.If you use the dates or vanilla- add that too
  • Blend for 1-2 minutes. *I actually make a double batch every time.
  • Pour into nut bag and strain over bowl. Before I bought my nut bag, I used cheese cloth, but truly, it isn’t as good that way- too much pulp. Invest in nut bags and you can use them over and over.
  • Gently squeeze the bag to extract the milk
  • I usually then pour the strained almond milk back into my vitamix pitcher and then use a silicone funnel and pour it into glass pitcher
  • You could save the almond pulp for future recipes

When I first started making this, I added both the medjool dates and the vanilla. Now I just use water & almonds. Perhaps as you get accustomed to the taste from cow’s milk to almond milk, you use the natural sweeteners, and can adjust your palate to drinking it plain. It is so tasty that way! It last about 5 days in the fridge, but you probably will drink it up before that! I bought glass containers and store it that way. Homegoods has some great deals on glass bottles and pitchers. I soak and store my almonds in large, glass Mason Jars. I usually store any extra nuts in freezer, ready to be eaten or blended!

Kid-approved flavored milk:

Once you make the almond milk, you can use it in cereal, smoothies, and also create your own version of flavored milk.

Strawberry Milk:

  • 1 cup almond milk
  • 4-5 strawberries
  • half banana

Blend in Vitamix. Kids love it!

Blueberry Milk

  • 1 cup almond milk
  • handful of blueberries
  • 2 tablespoons Hemp Seeds (2 tablespoons= 10g of protein)

Chocolate Milk:

If you freeze the bananas, it can be milkshake like. Yum.
